  • Brass usage dates back milleniums especially for cooking and storing. 
  • Use of brass roti box can be dated back centuries in the central India region especially in Maharashtra and surrounding states. 
  • Traditionally all brass cooking / storage vessels are always done with tin coating on the inside to enable storage of a variety of cooked and raw food. Tin coating helps to protect food from reacting with the metal. 
  • Brass is known for its anti-oxidant property and enables preserving the anti-oxidants in cooked or preserved food.  
  • The Tambat makers of Maharashtra have unique skills honed over centuries to work with Copper and brass metals
  • The process starts with making of a mould and making the rough product and processing the same. This process is a crafts secret which is shared only within the Tambat community
  • The rough products are hand worked for 3-4 hours with a finely balanced hand hammer beat on the surface to provide the unique craftsmen signature.
  • Brass is the preferred alloy for making roti box the as it lasts longer and does not impact the quality of food stored in them. 
  • Brass being a good conductor of heat , helps in removing the moisture and maintain the softness of the roti stored in them.

  • The brass roti dabba has tin coating on the inner surface. Use mild detergents , sponge to clean to prevent erossion of the coating. 
  • Brass oxidisation is normal and soak brass box in water with tamarind or lime or vinegar. This will help in removing certain level of oxidisation and bring back the shine.
  • As box is coated with tin, can be used to store acidic food items as well. 
  • Do not use wire scrubs for cleaning.
