This exquisite crafted Brass Paraat is by the traditional clusters of Punjab from the region called Jandiala Guru. The Thatheras near Amritsar are known for their traditional brass and copper craft of utensil making. This craft has been included in the UNSECO list of Intangible Cultural Heritage.
The traditions followed by the community here is that for non-acidic or uncooked food items, the need for tin coating(Kalai) is minimal and the same can be used without the tin coating.
Brass helps in preserving the natural anti-oxidants present in the atta while kneading the dough.
The Paraat comes without the Tin coating and based on discussion with few expert artisans and grandmother's this kitchen accessory have been deemed safe for use.
From 400 families who used to practice this craft, the number has dwindled to a meagre 15
Cooking in Brass has been part of our culture since time immemorial.
Note: Brass is generally used with tin coating in the cooking process. As per the traditional knowledge gathered from this community, for these particular application for dough making and roti storage, the same can be used without tin coating.

Do brass cookware need Kalai
Yes. All brass cookware except those for storing water/making coffee need kalai to prevent adverse reaction with the acidic elements of the food cooked in them.
How frequently do you need to do Kalai?
Depending on usage, kalai has to be redone between 12-15 months.
Does brass cookware work on induction and hot plates?
Brass cookware does not work on induction gas stops. You can use an induction converter to make these stove tops into a hot plate and use all traditional cookware, They do work on hot plates.

Is Brass dishwasher Safe?
Actually they are! It all depends on the detergent used and cleaning mode. Always test your brass once in dishwasher. Always clean brass in extra dry mode so all moisture and water is removed after cleaning.
