Kansa is same as bronze which is an alloy of Copper & Tin. Brass is an alloy of copper & Zinc
How can we serve acidic food without Kalai in Kansa?
Kansa has a high % of tin in the alloy itself. Acidic food can be stored/served for upto 4 hours without any adverse reaction from the copper in the alloy.
How can Kansa be used for Cooking?
Casting Bronze (A traditional technique developed during Chola Dynasty) to the ratio of 78:22 Copper & Tin can be used for cooking and will not break.
What type of Food Can be Cooked? and how to maintain?
You can cook anything and everything. There are no restrictions. Also you can use any soap for regular cleaning. You can also clean them in dishwasher.
Will Kansa work on Induction?
No. They do not work. They work on Gas and Ceramic hot plates. You can use an induction converter plate/disk to use kansa on induction cook top.
