Difference between Kansa, bronze and brass
Kansa is same as bronze which is an alloy of Copper & Tin. Brass is an alloy of copper & Zinc
How can we serve acidic food without Kalai in Kansa utensils
Kansa has a high % of tin in the alloy itself. Acidic food can be stored/served for upto 4 hours without any adverse reaction from the copper in the alloy.
Can we cook food in Kansa/Bronze?
Kansa serve ware are made by beating ingots or kansa sheets. You cannot cook in them as they can break.
Only casted bronze can be used for cooking. Explore our kansa tulsi range which you can use for cooking.
How long can we store food in Kansa
Traditionally kansa was widely and still used in temples for offering food to gods. The recommended duration is between 3-4 hours max for storing food in kansa (anything acidic). Casted bronze, we can use to store food for longer duration.
What clusters make Kansa for Zishta
We work with 3 clusters - In Maharashtra, Gujarat and Odisha. The first two clusters use kansa sheets for making kansa serveware. The Odisha cluster makes kansa ingots with copper and tin and then beats them to different serveware shapes.
How to maintain Kansa?
Kansa is easy to maintain. Regular wash with soap and water is fine. Once in a while scrub them with tamarind or lime skin to get the shine back.
