I bought a sauce pan after immense deliberation for boiling milk on a daily basis. I already own / inherited some awesome traditional bronze urulis that sees me cook payasam a couple of times a week. And the size I wanted was sold out by the time I made up my mind, so had to settle for the smallest size. The long, heat resistant handle and a note in the product description that said dishwasher safe cinched the deal, along with some not (yet?) scientifically proven Ayurvedic benefits claimed by everyone.

Here is what I think after a week of regular use:

Pros:
Takes its own sweet time to boil the milk; I presume that is good for not denaturing the milk proteins.

Really long handle that stays cool. Really important to my intended use.

Shape and form that satisfies modern sensibilities and convenience. Smooth finish without any sharp edges. Polished to a soft shine - so no crevices for the food to catch at the bottom and scorch. Best product photos at the website helped me buy with confidence. Other websites left several shadows for doubt.

Came with a certificate for the metal analysis; this was so EXTREMELY REASSURING. Other brands seemed not willing to even commit the copper - tin ratio in their descriptions. Any further enquiry was returned with silence. Except one. But the response came late, after I placed the order with Zishta.

And the brownie point - it cleans up in a jiffy. It is almost like a non-stick pan. A light scrub with a sponge and a drop of regular dish soap and it comes up clean. No soaking. I haven’t found a need to run it in the dishwasher. Or use pitambari yet. And it has stayed bright and shiny. I have always had to soak & then scrub my stainless steel milk pan with more than a light scrub before throwing it into the dishwasher. So, this choice to move to a bronze milk pan should really be a no brainer.

Cons:
The long handle and the small base / size of the pan calls for a bit of careful placement on the pan support of a gas hob; it will tilt easily if not centred. So sleepy mornings wake me up with a jolt in the kitchen.

The size to weight ratio can catch you by a bit of surprise. Possibly just a matter of getting used to it since stainless steel is so light.

I am not planning to drop it to check the brittleness of the bronze. But calls for careful handling.

And the price - This brand prices it to make it so dear! The priciest in the market by far.

RECOMMEND:
👉The bronze - yes!
👉The brand - yes, superb finish. The product came with the brand name stamped at the bottom. So Zishta is not a generic reseller like many in the market.
👉The price - I may be inclined to shop around with another retailer. I have now figured out that there are many out there.

Got mine in Dec 2016 through Amazon. And there has been no looking back. Dosas just lift off easily; SPECIAL MENTION for the traditional spatula that came with it - similar to my grandmother's (about a 100 yo design now) that went to some other cousin. I own an assortment of other types of cast iron griddles & cast iron spatulas, some traditional, some modern, some antique, but the shengottai dosakal (that's what I was told by the customer care in 2016, handworked sheet metal) beats them all silly for dosas. I usually hand wash it, but honestly, it has seen a few rounds in the dishwasher too, and it has survived beautifully with a great seasoning.

I have used it twice and have felt a perfect product for cooking.
In intense cold of northern India it keeps food warm for longer than standard kadai. Food cooked in it is very nutritious and don't get stick of burn while cooking.

Glad that I could buy it. It’s easy to clean and been using it almost everyday from day one. Looking forward to buy more from this collection.
